One question not really related to the core of your post: is running Immich in a VM inside a VM fine in terms of performance? I seem to remember somewhere someone saying that something as resource intensive as Immich would be severely hindered in a VE

The stack is Proxmox running […] a Debain VM. The Debian VM runs docker where Immich runs.
